| Let's get started! First, pour 250 ml. of hot whole milk into a measuring cup. Add 10 ml. of white vinegar. Stir solution. |

| No, we're not making coffee or lemonade. Actually we are pouring the milk vinegar solution through a coffee filter. The filter drains all of the liquid and holds the solid material within the filter. |

| Almost done! Now lift the coffee filter gently off the filter stand. I know what you're thinking---eeew! If you look closely at the solid material, it reminds you of cottage cheese. Why did this happen? |

| Adding the vinegar to the milk solution forced the molecules to rearrange themselves. The liquid molecules drained into the cup while the solid molecules clumped together to form a plastic-like solid. It felt squishy! by JH, Shanks |
